Monsoon Cravings: Healthy Millet Recipes to Enjoy This Rainy Season
Monsoon season is known to bring along various diseases such as dengue, cold, and viral fever. Therefore, it is essential to take care of your health during this time by avoiding junk food and street food. However, you can still satisfy your cravings with delicious and healthy recipes. Here are some easy-to-make millet recipes that are perfect for the monsoon season.
Millet Samosa:
Ingredients:
– 1 cup soaked and boiled jowar
– 1 ½ cup drained and rinsed chickpeas
– ½ cup chopped onion
– 2 cloves minced garlic
– ½ cup chopped fresh parsley
– ½ cup chopped fresh coriander
– 1 tsp ground cumin (jeera)
– ½ tsp ground coriander
– Salt as required
– ¼ tsp black pepper
– 2 tbsp oil
– 2 tbsp gram flour (besan)
Method:
1. In a mixer jar, grind the cooked millet, chickpeas, onion, garlic, parsley, coriander leaves, cumin, coriander, salt, and black pepper until the mixture comes together but still has some texture.
2. Add the oil and flour, and grind until thoroughly mixed.
3. Scoop the mixture into tablespoon-sized balls and flatten slightly.
4. Arrange the falafel on a crusty plate and place it on the high grill mesh rack in the microwave oven.
5. Set the oven to convection mode, 200°C, and bake for 12 minutes.
6. After the beep, remove the crusty plate, turn all falafel balls upside down, and bake for an additional 8 minutes.
7. Serve the falafel with pita bread, hummus, and your favorite toppings.

Millet Samosa:
Ingredients:
– ½ cup jowar flour
– 1 cup all-purpose flour
– A pinch of ajwain
– Salt as required
– ½ cup water
– Oil as required
For Filling:
– 2 boiled potatoes
– ¼ cup boiled peas
– ¼ tsp grated ginger
– 1 tsp red chili powder
– ½ tsp coriander powder
– 1 tsp cumin powder
– 2 tsp kasoori methi
– ½ tsp lemon juice
– 1 tsp garam masala
– Some chopped coriander leaves
– Salt to taste
Method:
1. Mix the jowar flour, maida, salt, oil, ghee, and ajwain to form a crumbly mixture.
2. Slowly add enough water to make a pliable dough, not too soft.
3. Divide the dough into balls and shape them.
4. Prepare the filling by mixing all the ingredients together.
5. Divide the dough into 4 equal parts and roll each ball into a 6-inch diameter circle.
6. Cut each circle in half and spread the paste lightly along the edge of one semicircle.
7. Spread the potato filling in the center, leaving the edges to fold into triangle-shaped pockets or desired shapes. Seal the edges with a little water.
8. Continue filling the rest of the samosas.
9. Place the samosas on a crusty plate, brush all sides with oil, and put it on the high grill rack in the microwave oven.
10. Set the oven to convection mode, 200°C, and bake the samosas for 10 minutes.
11. After the beep, turn the samosas upside down and bake for an additional 10 minutes.
12. Serve with ketchup or chutney.
