The taste of Magadha, the present-day Bihar, offers rich and spicy delicacies that remind one of home. Magadha was an ancient kingdom and holds significant historical value in India. Bihar, which was once the city of Magadha, has a cuisine that showcases a unique aroma and taste specific to the region. Radisson Blu, Noida, celebrated the flavors of Magadha once again, offering an enticing culinary experience. The entrance featured a small display that showcased the essence of Bihar, including an antique charpai (traditional Indian bed) and traditional spice-blending methods.
Upon arrival, we were greeted with a refreshing welcome drink – Sattu ka Sharbat. It was a delightful drink poured in a matka (earthen pot) with a slice of lemon and ice, starting off the gastronomical experience on a refreshing note. Sattu, or roasted gram flour, is a healthy ingredient that is prominent in Bihar’s cuisine.
Next, we indulged in various starters that showcased the food aesthetics of Magadha. The platter included tender paneer tikka, crispy fish fingers, chicken, and sattu ke kebabs. Sattu is a staple in Magadha’s cuisine and represents the essence of this region.
A must-try delicacy from Magadha is Litti chokha. Freshly baked and served with ghee, it was accompanied by sumptuous baingan chokha (mashed eggplant) and chilles. The perfectly cooked Litti chokha had the right balance of spices, tempting us to have more.
The presentation of the dishes was as important as the taste. Traditional Magadhi cuisine was showcased in Matkas (clay pots), adding to the authenticity of the experience. The vegetarian plate consisted of dishes like Alloo and Loki ka Chokha (mashed potatoes and bottle gourd), Dal Ki Dulhan (lentils), Home Style Karela (bitter gourd), and Chana Masala (chickpea curry).
The non-vegetarian plate featured the iconic Meat Champaran, a tender meat dish bursting with flavors from Champaran. It was accompanied by Darbangha style Chicken and Sarso Macchi (Fish) Curry.
To end the meal on a sweet note, Bihar’s famous Malpua with rabri was served, along with options like kesar peda and barfi. The kesar peda was a bite not to be missed. The desserts added the perfect finishing touch to a satisfying dining experience.
From tender meat infused with flavors, to the touch of home-cooked meals, Magadha’s cuisine at Radisson Blu was a delightful experience.
