Bakra Eid is celebrated all over India with great joy and zeal. It is also an occasion to meet family and friends and offer prayers. This day is widely marked as a holiday. Some people even host parties at their homes and enjoy a delicious family feast together.

It is that time of the year when families are also busy cooking some of the most elaborate and delectable meals. From chicken tikkas and kebabs to biryani and more sumptuous meals, the tables are ready to be laid. If you are still thinking of making a quick and unique addition to the meal table, here is an easy-to-make recipe for preparing mutton burra kebab by Chef Sandipan Ghosh, CYK Hospitalities.

Mutton Burra Kebab Recipe:
– 8 mutton chops
– 1 medium-sized onion
– 2-inch ginger
– 10 cloves of garlic
– 30 gm papaya skin
– 2 tbsp lime juice
– 2 tbsp salt
– 1 tsp black salt
– 2 tbsp chili powder
– 1 tbsp Kashmiri red chili powder
– 1 tbsp shahi garam masala
– 1 tsp kasuri methi
– 1 tsp black pepper
– 2 tbsp malt vinegar
– 4 tbsp mustard oil
– 1/2 cup hung yogurt
– For the Dhungar: 1 piece of small charcoal, 1 teaspoon ghee, 2-3 cloves

Step-by-Step Process to Make Mutton Burra Kebab:
1. Trim off the excess fat on the mutton chop, but keep around 15-20% as it adds flavor.
2. Make a paste of onion, ginger, garlic, papaya skin, lime juice, salts, chili powders, garam masala, kasuri methi, vinegar, and mustard oil.
3. Mix the paste with yogurt and rub it on the mutton chops for 5-6 minutes.
4. Prick the meat and marinate it with the paste for 2-3 hours.
5. Burn a piece of charcoal, place it in a bowl, and add ghee over it. Cover the plate for 15 minutes to smoke the meat.
6. Grease the grill tray and place the marinated mutton on it. Preheat the oven to 200 degrees Celsius and bake for 30 to 40 minutes.
7. Turn the chops midway and cook until done and charred over the flame.
8. Once they have grill marks, place them on a plate.
9. For serving these kebabs, place them on a plate along with half-cut lemon, onion rings, and mint chutney.

Jungli Murgh:
Another easy yet unique dish is jungli murgh. Here is a simple recipe by Chef Ishant Khanna as the Corporate Chef at Badmaash.

Ingredients:
– 250gm chicken curry cut
– 30ml mustard oil
– 3gm bay leaf
– 2gm cloves
– 25gm ginger garlic paste
– 75gm chopped onion
– 10gm salt
– 10gm degi mirchi powder
– 5gm garam masala powder
– 15gm coriander powder
– 15gm cumin powder
– 5gm turmeric powder
– 5gm chopped mint
– For Tempering: 10ml mustard oil, 5gm whole red chili, 5gm sliced garlic, 20gm diced onion, 5gm slit green chili

Method:
1. Take a heavy base pan or handi and add mustard oil. Once hot, add bay leaf and cloves.
2. Add chopped onion and cook until golden brown.
3. Add ginger garlic paste and cook for some time.
4. Add the powder masalas and salt.
5. Add the chicken and sauté until it starts changing color on all sides.
6. Add water to the pan, enough to cover the masala and chicken.
7. Cook covered on a medium flame until the chicken is completely cooked.
8. For the tempering, heat mustard oil in a pan and add the whole red chili. Cook for a few seconds and then add the remaining ingredients. Saute until the garlic turns brown.
9. Add this tempering to the chicken base and mix well.
10. Check for salt and finish with chopped mint.
