In early 2022, Souvla announced it would be opening at Marin Country Mart in Larkspur that summer. Things didn’t quite pan out that way, but at last, the restaurant is in its home stretch.
“It’s been quite the journey for sure,” Souvla CEO Charles Bililies told SFGATE. “We were obviously very excited to be bringing Souvla to Marin County and Marin Country Mart. And so we sort of jumped at the first opportunity to announce it, but … it took quite some time for us to get all of our permits.”
Part of what delayed the process, he said, is that the building they are opening at 1805 Larkspur Landing Circle was divided from one large space into three smaller spaces for different businesses to operate. One of these will be Loveski, the popular Napa deli, and the third has yet to be announced.

This will be Souvla’s sixth location, following the opening of its Dogpatch location in August 2022. The Larkspur restaurant is the first one not designed by Bililies himself — instead, it was designed by LA-based M. Winter Design. The space features an outdoor patio with 60 seats and a design meant to evoke “a Greek island retreat,” Bililies said (think teracotta tiles and a plant-lined pergola). As far as the menu goes, expect all the Souvla classics, from Greek sandwiches and salads to baklava-topped frozen yogurt and an all-Greek beverage menu.
With the opening of the Larkspur location, Souvla will also be able to expand its delivery radius to most of Marin County, from Sausalito to Tiburon to San Rafael and Fairfax.

For Souvla fans living in other parts of the Bay Area clamoring for a restaurant to open near them, Bililies had good news.
“We are very much on the hunt to find the next Souvla,” he said. “We’d like to open up hopefully another three or four more around the Bay Area over the next few years.”
