Air Fryer Guy’s ‘Big Mac’ spring rolls recipe

Picture the juicy flavours of a Big Mac wrapped up into a crispy spring roll.

‘BIG MAC’ SPRING ROLLS

These little treats are a staple at my house. The only issue is that they don’t last very long because they are so delicious.

Makes 8

Ingredients

  • 2 hamburger patties
  • 1⁄4 cup pickles, diced
  • 1⁄2 cup cheese, grated
  • 1⁄2 onion, diced
  • 1⁄2 tablespoon sesame seeds
  • 1⁄4 cup special burger sauce, plus more for dipping
  • salt and pepper to taste
  • 8 spring roll wrappers, thawed
  • cooking oil spray

Method

  1. Preheat air fryer to 190°C.
  2. Place burger patties into air fryer and cook at 190°C for 8 minutes, turning halfway.
  3. Remove patties from air fryer and let cool for 15 minutes. (If you want to speed up this process, just put the cooked patties into the fridge.)
  4. Once patties are cooled, place onto a chopping board and dice into small pieces.
  5. In a large bowl, add chopped patties, pickles, cheese, onion, sesame seeds and burger sauce. Combine well. Add salt and pepper to taste.
  6. On a dry surface, place the wrappers smooth side down in a diamond position. Place a heaped dessert spoon of burger filling in the bottom corner. Roll up halfway, fold sides in, then finish rolling. Dip your finger into some water and lightly moisten the last flap of the wrapper. Lightly press along the seal until it sticks. Repeat with the remaining wrappers.
  7. Spray both sides of spring rolls with a generous amount of cooking oil spray. Place spring rolls into the air fryer and cook at 190°C for 7–10 minutes or until the pastry is golden and crunchy.
  8. Serve with special burger dipping sauce.

CANDIED SWEET POTATO SKINS

You will never throw away your potato peels again.

Serves 2–4

Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons melted butter
  • 1 teaspoon cinnamon
  • 2 tablespoons sugar

Method

  1. Rinse and wash the potatoes thoroughly.
  2. Using a potato peeler, peel the potatoes.
  3. Set the potatoes aside for later use. (We only need the peels for this recipe.)
  4. Add the peels to a large bowl. Add melted butter, sugar and cinnamon then toss to combine.
  5. Preheat air fryer to 200°C.
  6. Add the potato skins to the air fryer and cook at 200°C for 5-10 minutes (tossing regularly) or until the skins are golden and crispy.
  7. Remove potato skins from the air fryer.
  8. Enjoy!
