CHICKEN & HOISIN RICE PAPER ROLLS

MAKES 12 ROLLS (Gluten Free)

Ingredients

12 Coles rice paper sheets

4 tablespoons hoisin sauce (please get gluten free- I think rolled brand is)

2 cups cooked BBQ chicken, skin off, shredded

1 Lebanese cucumber, seeded, cut into matchsticks

1 large carrot, peeled, shredded or grated

1 cup cabbage, shredded

1 small red capsicum, cut into matchsticks

½ bunch mint, leaves picked

4 butter lettuce leaves, washed, torn into 3 pieces each

Dipping sauce:

2 tablespoons sweet chilli sauce

Juice of ½ lime

1 tablespoons gluten free soy sauce

1 teaspoons white sesame seeds, toasted

Method

Step 1. Place all the dipping sauce ingredients into a small bowl and mix well. Set aside.

Step 2. Toss the shredded chicken with the hoisin sauce in a medium bowl.

Step 3. Fill a shallow bowl with water and dip a rice paper sheet into the water for 6 seconds. Place the rice sheet onto a clean board.

Place a piece of lettuce at one end of the rice sheet then top with a small amount of chicken, cucumber, carrot, cabbage, capsicum and mint.

Step 4. Cut the rice roll sin half then serve with the dipping sauce
