‘The Healthy Chef’ AKA Teresa Cutter makes ugly scones that taste beautiful

Chef and author Teresa Cutter AKA The Healthy Chef, has just released her latest book Simple Healthy Recipes and joined The Morning Show to share her recipe for what she calls ‘ugly scones’ where she uses spelt flour instead of normal flour.

280 g (2 cups) spelt flour

½ teaspoon sea salt

15 g (3 teaspoons) baking powder

250 ml (1 generous cup) natural Greek yoghurt

125 ml (½ cup) milk, your choice

1 generous tablespoon raw honey

METHOD –

PREHEAT your oven to 180°C, fan forced. COMBINE the spelt flour, baking powder and salt in a bowl. IN A SEPARATE BOWL, combine the yoghurt, milk and honey. POUR the yoghurt mixture into the flour.

MIX lightly with a fork or knife until you achieve a soft sticky dough. SCOOP OUT 8 portions onto a lined baking tray, using an ice cream scoop or just dollop on with a spoon.

BAKE for 15 minutes until golden.

SERVE warm with jam and a dollop of yoghurt.

INSPIRATION

Cook scones on top of the stove instead of the oven. Just scoop out portions onto a heated non-stick pan and cook over a gentle heat with the lid on for 4 minutes on each side until golden.

Fold through fresh blueberries or chopped pear.

For a savoury scone, add chopped chives, grated zucchini and a handful of cheddar. Serve with Greek yoghurt or smashed avocado.

Makes 8 ugly scones.
