Turn the humble snag into two different sausage recipes the whole family will love

Spicy Sausage Ragu

Ingredients –

500g sausages either plain Italian or chilli sausages

1 onion

3 garlic cloves

2 stalks of basil

2 bay leaves

3 cans of peeled tomatoes/ or 2 bottles of Passata

Heaped spoon of tomato concentrate

One small capsicum for sweetness

Salt & Pepper

A pinch of sugar

Method –

On medium heat cook onion until translucent. Add stalks of basil with garlic.

Remove 500g of sausages from their casing and add to saucepan. Separate the sausage meat so it resembles mince meat.

Add 3 cans of peeled tomatoes or 2 bottles of passata. Break down the whole tomato’s and bring to a simmer.

Add salt, a pinch of sugar, 2 bay leaves and a heaped tablespoon of tomato concentrate.

Add one small baby capsicum to the sauce this adds a beautiful sweetness and extra flavour to the sauce.

Cook on low heat for about an hour and serve with your favourite pasta with grated Parmesan.

Boujee Sausage Sandwich

Ingredients –

Italian Fennel Sausage

Smoked Scarmoza Cheese or Mozzarella

Homemade Basil Pesto

Italian Panini

Method –

Cut the panino in half and layer with cheese.

Remove sausage from casing and smoother in a thin layer over the bread roll. Sprinkle good olive oil on the top.

Cook on a grill, BBQ or stove until cheese is melted and sausage is cooked through. Turn over to toast the panino.

Once cooked brush with fresh basil pesto and serve.
